  • 1 package (16 ounces) dry spiral pasta (or rotini pasta)
  • 500 grams cooked chicken (4 cups, cubed)
  • 1 can (20 ounces) pineapple tidbits (drained)
  • 1 1/2 cups celery, sliced
  • 3/4 cup green onions, thinly sliced
  • 100 grams red grapes (1 cup, seedless)
  • 100 grams green grapes (1 cup seedless)
  • 1 package (5 ounces) dried cranberries
  • 1 cup ranch salad dressing (Not included in nutritional facts)
  • 6 ounces mayonnaise (3/4 cup)
  • 300 grams cashew nuts (2 cups, salted)

How to Make

  • Step 1: Cook pasta according to package directions.

  • Step 2: Meanwhile, in a large bowl, combine the chicken, pineapple, celery, onions, grapes and cranberries.

  • Step 3: Drain pasta and rinse in cold water; stir into chicken mixture.

  • Step 4: In a small bowl, whisk the ranch dressing and mayonnaise.

  • Step 5: Pour over salad and toss to coat.

  • Step 6: Cover and refrigerate for at least 1 hour.

  • Step 7: Just before serving, stir in cashews.
