Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 4 ounces yellow onion, chopped (1/2 onion)
  • 1 zucchini, chopped
  • 1 large carrot, chopped
  • 2 celery stalks, chopped
  • 1 tablespoon gingerroot, chopped
  • Jalapeno pepper (1/2 pepper, chopped, optional)
  • 1 can (28 ounces) diced tomatoes (not drained)
  • 1 tablespoon cumin
  • 1/2 tablespoon coriander
  • 1 tablespoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 7 ounces sole fish fillets (white fish such as haddock, tilapia, chopped)
  • 7 ounces scallops (cut in half)
  • 1 cup water

How to Make

  • Step 1: Heat oil in a large pot over medium heat.

  • Step 2: Cook garlic and onion until soft.

  • Step 3: Add zucchini, carrot, celery, ginger and jalapeno pepper.

  • Step 4: Saute for 5 minutes

  • Step 5: Add tomatoes and juice, spices, fish, scallops and water and bring to a boil.

  • Step 6: Reduce heat and simmer for 7-10 minutes.
