Ingredients

The ingredients are:
  • 1 to 1 1/2 pound ground beef
  • Taco seasoning mix (1 packet)
  • 2 tablespoons water
  • Salt and pepper
  • 240 grams tortillas (8 flour tortillas, 6-inch)
  • Oil (cooking oil, about 1 cup)
  • 1 can (8 ounce) refried beans (1 cup)
  • Picante sauce (drained slightly, I used about 1 1/2 bottles)
  • 2 cups cheddar cheese, shredded
  • 2 cups monterey jack cheese, shredded
  • 1 to 2 red bell peppers, diced (seeds removed)
  • Sliced black olives
  • 2 jalapeno peppers (sliced into rings, or chopped, optional)

How to Make

  • Step 1: Cook the ground beef over medium heat until no longer pink, then drain the fat. Add in onions, taco seasoning and 2 tablespoons of water; let mixture simmer over medium heat for 10 minutes, stirring often. Mix in about 1 cup of refried beans and heat though. Add salt and pepper to season. Remove from heat and set aside.

  • Step 2: Heat oil in frying pan over medium-high heat.

  • Step 3: When oil is hot, fry each tortilla for about 30-45 seconds per side and drain on paper towels, be sure to pop any bubbles that form when frying so that the tortilla lays flat in the oil. Fry each tortilla until golden brown. Place each tortilla on a lightly greased baking sheet.

  • Step 4: Preheat your oven to 350F.

  • TO ASSEMBLE

  • Step 5: First, divide the ground beef&bean mixture over each tortilla. Top with salsa.

  • Step 6: Then last in this order, divide the bell pepper, jalapeno slices, both cheeses and ending with olives on the top.

  • Step 7: Bake for about 12-15 minutes or until very hot and cheese is bubbly.
