Ingredients

The ingredients are:
  • 450 grams fresh spinach (2 cups)
  • 1 cup ricotta cheese
  • 3/4 cup Parmesan cheese, grated (fresh)
  • 1 large egg
  • 3 tablespoons potato starch
  • Nutmeg, 1 pinch
  • Salt and pepper
  • 3 quarts water
  • 3 tablespoons butter

How to Make

  • Step 1: Combine spinach, cheese, egg, spices and potato starch together.

  • Step 2: Bring water to a rolling boil.

  • Step 3: Wetting hands first, form gnocchi into balls the size of walnuts and drop into boiling water.

  • Step 4: They will fall to bottom. When they rise they are done.

  • Step 5: Just before serving, preheat oven to 350°; sprinkle with butter and Parmesan cheese and heat through.
