Step 1: Preheat oven to 400 degrees.
Step 2: Wash the mushrooms and remove the stems. Sets caps aside and chop half of the stems.
Step 3: Heat butter in a skillet. Add in celery, onions, peppers and garlic, saute for a few minutes. Transfer to a bowl and cool in refrigerator.
Step 4: To the cooled onion mixture, add in all other ingredients (except the cheese slices).
Step 5: Place the mushroom caps into a buttered baking dish, stem-side up.
Step 6: Spoon a heaping teaspoon full into each cap (depending on the size of your caps).
Step 7: Cover each cap with shredded cheese.
Step 8: Bake 10-15 minutes.
