The ingredients are:
  • 2 pounds fresh cod fillets (boneless)
  • 2 tablespoons unsalted butter (melted)
  • 1/2 teaspoon salt
  • 2 cloves garlic, chopped
  • 2 tablespoons olive oil
  • 1 can (5 ounce) diced tomatoes (drained)
  • 19 grams pine nuts (2 tablespoons)
  • 1/4 cup raisins (golden)

How to Make

  • Step 1: Heat oven to 400° F.

  • Step 2: Pat fish pieces with paper towels and place in a shallow roasting pan. Brush with butter and sprinkle with salt.

  • Step 3: Bake for 15 to 20 minutes until fish flakes easily with a fork.

  • Step 4: Heat garlic and olive oil in a saucepan over medium heat until garlic is aromatic, about 3 minutes.

  • Step 5: Add tomatoes, pine nuts and raisins and stir until blended.

  • Step 6: Serve hot over baked fish.
