Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 2 1/4 pounds boneless skinless chicken thighs (12 thighs, each cut in half)
  • 1 cup chopped yellow onions
  • 1 cup chopped red pepper
  • 2 tsp minced garlic, or to taste
  • 1 1/2 tablespoons grated ginger
  • 1 1/2 teaspoon curry powder
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1 can (14 ounce) coconut milk (398ml)
  • 1/4 cup mango chutney
  • 2 teaspoon grated lemon zest
  • 1/2 teaspoon salt
  • 1 large apple (Golden Delicious, peeled, cored and coarsely chopped OR chopped mango)
  • 1/2 cup green peas (frozen)
  • 2 tablespoon minced fresh cilantro

How to Make

  • Step 1: Heat olive oil in skillet over medium to medium high heat.

  • Step 2: Add chicken pieces and cook until both sides are lightly browned, about 2 minutes per side.

  • Step 3: Remove chicken and keep warm.

  • Step 4: Add onions, red pepper and garlic to the same skillet.

  • Step 5: Cook and stir until veggies begin to soften, about 3 minutes.

  • Step 6: Add ginger, curry powder, chili powder, turmeric and cinnamon.

  • Step 7: Cook and stir for 1 more minute.

  • Step 8: Add coconut milk, mango chutney, lemon zest and salt; mix well.

  • Step 9: Stir in chicken pieces and apples or mango.

  • Step 10: Cover and simmer over low heat for 15 minutes.

  • Step 11: Add peas and cilantro.

  • Step 12: Simmer, uncovered for 5 more minutes.
