Step 1: Heat olive oil in skillet over medium to medium high heat.
Step 2: Add chicken pieces and cook until both sides are lightly browned, about 2 minutes per side.
Step 3: Remove chicken and keep warm.
Step 4: Add onions, red pepper and garlic to the same skillet.
Step 5: Cook and stir until veggies begin to soften, about 3 minutes.
Step 6: Add ginger, curry powder, chili powder, turmeric and cinnamon.
Step 7: Cook and stir for 1 more minute.
Step 8: Add coconut milk, mango chutney, lemon zest and salt; mix well.
Step 9: Stir in chicken pieces and apples or mango.
Step 10: Cover and simmer over low heat for 15 minutes.
Step 11: Add peas and cilantro.
Step 12: Simmer, uncovered for 5 more minutes.
