  • 1 pound fresh spinach
  • 2 tablespoons olive oil
  • 19 grams pine nuts (2 tablespoons)
  • 1 garlic clove, finely minced
  • Salt and pepper, to taste

How to Make

  • Step 1: Wash the spinach thoroughly and place into a large pan. Pour over a little boiling water, cover tightly and cook over medium heat for 2-3 mins, until the leaves have wilted.

  • Step 2: Drain well in a colander. Press the spinach down to extract the last of the water.

  • Step 3: Meanwhile heat the oil in a skillet over medium heat, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through.

  • Step 4: Season and serve.
