Ingredients

The ingredients are:
  • 4 cups mashed potatoes (cooled or cold and without any eggs previously added)
  • 1 teaspoon onion powder
  • 1 large egg (light beaten)
  • 1 green onion, sliced
  • 1 cup grated cheddar cheese
  • 1/2 cup all-purpose flour (more for coating patties)
  • Salt and pepper
  • Butter & oil, for frying
  • Chives for garnish, if desired

How to Make

  • Step 1: Combine mashed potatoes, onion powder. egg, green onion, shredded cheese and 1/2 cup flour in a large bowl. Season the mixture with salt and pepper.

  • Step 2: Spoon up about 1/3 cup of the mixture, shape into balls.

  • Step 3: Roll each into flour, then flattened into patties.

  • Step 4: Melt butter and oil in large skillet over medium heat.

  • Step 5: Fry each patty in the skillet about 5 minutes each side until golden brown.

  • Step 6: Garnish with chopped chives
