Ingredients

The ingredients are:
  • 2 portobello mushrooms (cleaned, stem and fronds removed)
  • 1/4 cup onion, finely chopped
  • 2/3 cup chopped sweet peppers (mixed peppers, finely chopped)
  • 3 garlic cloves, finely chopped
  • 3 tablespoon barbecue sauce (spicy bbq sauce)

How to Make

  • Step 1: Pre-heat oven to 350f.

  • Step 2: Chop the onions, peppers& garlic.

  • Step 3: Place mushrooms on a flat tray and bake for apprx 12 minutes.

  • Step 4: Meanwhile place all the chopped ingredients, except BBQ sauce, in a lightly oiled skillet.

  • Step 5: Stir fry over medium high heat until ingredients are soft and heated through(apprx 8 minutes).

  • Step 6: Add BBQ sauce, mix, cook 2 minutes.

  • Step 7: When you take the mushrooms out of the oven empty out the liquid but save it.

  • Step 8: Add a bit of the mushroom liquid to the veggie mixture.

  • Step 9: Stuff the hot mushrooms with the cooked ingredients.

  • Step 10: Serve.
