Ingredients

The ingredients are:
  • 1 pound ground turkey
  • 1 cup pepperoni, chopped
  • 1 to 2 large sage leaf sprigs, chopped (note that these accounts for sprigs which contain various leaves)
  • 4 to 6 garlic cloves, minced
  • Sea salt to taste
  • Ground black pepper, to taste
  • 2 tablespoons oil
  • 1/3 cup mayonnaise
  • 1/4 cup chopped fresh parsley (or 1⁄4 cup fresh basil)
  • 1/2 to 1 small garlic clove, grated
  • 1 lemon (zest of)
  • 4 slices (4 ounces) provolone cheese
  • 6 ounces bread rolls (4 rolls of your choice lightly toasted)
  • Lettuce leaf
  • 4 slices tomatoes (beefsteak, optional)

How to Make

  • Step 1: In a bowl place the ground turkey, pepperoni, half the 3 minced garlic cloves, sage, salt and pepper.

  • Step 2: Mix together and form into 4 equal sized patties.

  • Step 3: Heat a large cast-iron skillet (preferably a griddle pan) over medium-high heat. Add oil to grease bottom of pan.

  • Step 4: Add the patties and cook, undisturbed, until browned, 5 minutes. Turn and cook until golden brown on the bottom for 3 more minutes until you have reached desired doneness.

  • Step 5: Meanwhile, combine the mayo, lemon zest, herb mixture, the other grated garlic clove, salt and pepper.

  • Step 6: Top each patty with 2 slices cheese, cover and cook until the cheese melts, about 1 minute. Transfer the patties to a plate.

  • Step 7: Toast the buns cut-side down in the skillet, then remove from the pan and spread with the herb mayonnaise. Season the tomato slices with salt and pepper. Sandwich the lettuce, burger patties and tomatoes on the buns. Serve.
