  • 2 yellow onions (thinly sliced)
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon ground coriander (NOT cilantro)
  • Lettuce, for serving
  • 3 large eggs (hard boiled, peeled and quartered, for garnish)
