Ingredients

The ingredients are:
  • 1 1/4 to 1 1/2 pounds peaches (4 large peaches, pitted and quartered, freestone)
  • 8 cinnamon sticks
  • 8 fresh mint leaves
  • FOR RUM BUTTER BASTE
  • 4 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1/4 cup rum (dark)
  • 1 teaspoon lime juice
  • Salt, 1 pinch (optional)

How to Make

  • Step 1: Preheat grill to high.

  • Step 2: Brush and oil grill grate.

  • Step 3: Using a metal skewer, make a starter hole in the center of each peach quarter (from outside to pit side).

  • Step 4: Push a cinnamon stick through a peach quarter.

  • Step 5: Add a mint leaf.

  • Step 6: Add another peach quarter.

  • Step 7: Repeat with remaining cinnamon sticks, peaches and mint.

  • Step 8: Combine the butter, sugar, rum and salt in a saucepan and boil until thick and syrupy, 3 to 5 minutes.

  • Step 9: Grill the peaches over direct heat until nicely browned on both sides, 2 to 4 minutes per side, basting with the rum butter.

  • Step 10: Serve hot.
