Ingredients

The ingredients are:
  • 1 can (298 grams) lima beans (drained & rinsed)
  • 3/4 cup chopped yellow onion
  • 3/4 cup chopped mushrooms (fresh)
  • 1 large tomato (coarsely chopped)
  • 1 teaspoon Montreal steak spice
  • 3/4 teaspoon Tex-Mex spice
  • 10 ounces baby spinach (washed & spin dry)

How to Make

  • Step 1: Over medium/high heat in a lightly oiled skillet saute the onions & mushrooms (approx 10 minutes).

  • Step 2: Add tomato,continue cooking for 2 minutes.

  • Step 3: Add spices. Cook a further minute.

  • Step 4: Add spinach & cook until the spinach is wilted.
