  • 1/2 pound cod fish fillet (or tilapia)
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon black pepper
  • Dash salt, to taste
  • 8 ounces plum tomatoes (2 tomatoes, cored and cut lengthwise into thin slices)
  • 2 teaspoons grated Parmesan cheese

How to Make

  • Step 1: Preheat oven to 400F.

  • Step 2: Pat fillet dry and cut into 2 serving pieces.

  • Step 3: Combine oil and lemon juice in a baking dish. Add fish and turn to coat both sides.

  • Step 4: Sprinkle with basil, pepper, and salt.

  • Step 5: Overlap tomatoes in an even layer on fish and sprinkle with Parmesan cheese.

  • Step 6: Cover with foil and bake about 10-15 minutes or until fish flakes easily.
