Ingredients

The ingredients are:
  • 4 ounces dry spaghetti (whole grain or regular spaghetti, about half an 8 ounce package)
  • 1/2 water (reserved cooked pasta water)
  • 2 tablespoons oil
  • 1 small yellow onion (chopped)
  • 1/4 cup chopped green bell pepper
  • 1/2 pound cooked pork butt (shredded, homemade or store bought pulled pork without sauce)
  • 1 garlic clove, minced
  • 1 cup barbecue sauce (your favorite)
  • 1 cup baked beans (Bush's Brown Sugar Hickory Smoked Baked Beans)
  • Salt & pepper to taste

How to Make

  • Step 1: Heat the olive oil in a large skillet over medium-high heat, add the bell pepper and onion and saute' until the vegetables are softened, about 5 minutes. Add the garlic and saute' for an additional minute.

  • Step 2: Add the cooked pulled pork, barbecue sauce, and baked beans. Turn the heat to medium-low and simmer the mixture for about 15 minutes.

  • Step 3: Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions, until al dente, about 10 minutes. Drain spaghetti and reserve 4 ounces of cooked pasta water.

  • Step 4: Add the cooked spaghetti to the barbecue mixture and toss until completely coated with sauce. Add the reserved pasta water at the very end if the mixture is too thick.

  • Step 5: Season with salt and pepper.
