Step 1: In a large skillet, melt butter with the oil. Add the onion, celery and garlic and saute until soft and transparent.
Step 2: Add tomato sauce and tomato paste and stir until smooth.
Step 3: Add remaining ingredients and bring to slow simmer.
Step 4: Simmer over low heat for around 45 minutes.
Step 5: Remove the bay leaf. Cool refrigerate 24 hours before using the sauce.
