Step 1: In a large pot of boiling water cook the potatoes until just tender. Drain and let cool slightly. Cut potatoes into small pieces and place in a large bowl.
Step 2: Meanwhile heat 2 teaspoons olive oil in a skillet over medium low heat. Add onion and cute until translucent (5 minutes or so). Stir in garlic and cook another minuted.
Step 3: Add onion mixture to the potatoes along with 1/4 cup oil, tomatoes, vinegar, basil and oregano. Toss. Season with salt and pepper.
