Ingredients

The ingredients are:
  • 1 yellow onion (chopped)
  • 2 carrots (peeled and sliced)
  • 4 garlic cloves (minced)
  • 2 tablespoons chipotles in adobe (pureed)
  • 1 can (28 ounce) tomatoes (diced)
  • 2 tablespoons chile powder
  • 2 teaspoons ground cumin
  • 1 can (15 1/2 ounce) black beans (drained)
  • 3 pounds boneless skinless chicken thighs (trimmed and cut into 1 inch pieces)
  • 2 scallions, trimmed and chopped
  • 1 lime (juice only)
  • Kosher salt
  • Cheddar cheese, shredded
  • Sour cream

How to Make

  • Step 1: In a large slow cooker combine the first 8 ingredients (- beans); stir to combine and then add the chicken and stir again. Coon on high for 4-6 hours or on low for 6-8 hours.

  • Step 2: Stir in scallions and lime juice just before serving. season with salt.

  • Step 3: Serve with shredded cheese and sour cream on the side.
