  • 4 cups beef stock (1 litre)
  • 700 ml tomato passata
  • 1/2 teaspoon granulated sugar
  • Salt and cracked black pepper
  • 375 grams tortellini (veal tortellini, or beef or your favourite filled pasta)
  • Shredded basil (to serve)

How to Make

  • Step 1: Place the stock, tomato passata, sugar, salt and pepper in a large saucepan over medium heat and bring to a high simmer.

  • Step 2: Add the tortellini and cook following packet instructions or until al dente.

  • Step 3: To serve, spoon the tortellini among serving bowls and pour over the soup and sprinkle with basil and serve immediately.
