Step 1: In a pot over low heat bring the cream to a simmer and then add the gorgonzola and butter. Season with salt and pepper. Add spinach and ricotta. Stir until smooth. Remove from heat and keep warm.
Step 2: Cook spaghetti until al dente (8-10 minutes). Drain well. Return pasta to pot and add sauce and toss.
Step 3: Transfer pasta to a large serving bowl and sprinkle with the parmesan.
