Ingredients

The ingredients are:
  • 20 ounces tomatoes (4 large plum, cored, seeded and cut into 1/2 inch dice, about 1 3/4 cups)
  • 1 jalapeno pepper (seeds and ribs removed, minced)
  • 2 green onions (including green tops, cut into thin slices)
  • 3/4 cup diced onion (sweet Walla Walla, or any sweet onion would work)
  • 1/2 cup fresh chopped cilantro leaves
  • 1/2 teaspoon minced garlic
  • 1 1/2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons fresh lime juice
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon sea salt (or 1/4 teaspoon kosher salt)

How to Make

  • Step 1: In a medium bowl, combine the tomatoes, jalapeno, green onion, sweet onion, cilantro and garlic.

  • Step 2: In a measuring cup, stir together the lemon juice, lime juice, sugar, coriander, cumin and salt.

  • Step 3: Stir until the sugar and salt dissolve, and then pour over the tomato mixture.

  • Step 4: Stir gently to combine.

  • Step 5: Transfer to a serving bowl, cover, and set aside for at least 1 hour to allow the flavors to meld.
