Step 1: Heat oven to 375°F.
Step 2: Line 12 muffin cups with paper baking cups, or spray with cooking spray.
Step 3: In large bowl, combine graham cracker crumbs, all purposed, flour, whole wheat flour, brown sugar and baking powder; mix well.
Step 4: Sit in pecans and dates.
Step 5: Slightly beat egg whites in small bowl.
Step 6: Add milk and oil; blend well.
Step 7: Add to dry ingredients all at once; stir until dry ingredients are just moistened.
Step 8: Fill muffin cups 3/4 full.
Step 9: Bake for 16 to 19 minutes or until toothpick inserted in center comes out clean.
Step 10: Cool 1 minute; remove from pan.
