Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 pound cod fillets (cut into 2 pieces
  • 4 tablespoons Garlic & Herb Cheese Spread (Alouette)
  • 3/4 cup diced tomatoes (drained, Fire Roasted diced tomatoes, bell peppers, onions and garlic)
  • 1 tablespoon dried parsley
  • 1/2 teaspoon dried Italian seasoning
  • 2 tablespoon grated Parmesan cheese (or shredded)
  • Butter Spray
  • Salt and pepper, to taste

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Pour oil into baking dish, coat the bottom of the pan; arrange the cod fillets in the dish, pat dry with paper towel.

  • Step 3: Spread fillets with Alouette cheese spread; 1 tablespoon on each fillet, top with drained tomatoes, parsley, parmesan cheese, Italian seasoning then spray with butter flavored spray.

  • Step 4: Bake uncovered in preheated oven for 25 minutes.
