  • 5 large eggs (hard boiled, about 1 cup chopped)
  • 1/2 pound bacon (cooked and chopped)
  • 1 package (2 pound) frozen peas
  • 1 cup diced celery
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup green onions (chopped, green and white parts)
  • 1/4 cup pickle relish
  • 1/4 cup chopped bell pepper (red is best for color contrast, but Green works as well)
  • 1 tablespoon granulated sugar
  • 1 tablespoon yellow mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper (to taste)

How to Make

  • Step 1: Prepare the Hard Cooked Eggs, peel Chop.

  • Step 2: Meanwhile, cook the bacon, then drain.

  • Step 5: Combine everything except the eggs and stir to mix.

  • Step 6: Next add the eggs and carefully fold to mix.
