Ingredients

The ingredients are:
  • 3 kg plums (blood plums)
  • 1 kg granulated sugar
  • 1 litre malt vinegar
  • 40 grams salt (cooking salt)
  • 14 grams cayenne pepper
  • 14 grams ginger (ground)
  • 14 grams cloves(ground)

How to Make

  • Step 1: Wash and cut up the plums removing the stones.

  • Step 2: Place into a large saucepan with other ingredients.

  • Step 3: Bring to boil and boil for 1 hour and 20 minutes.

  • Step 4: Push through a strainer or use a stick blender.

  • Step 5: Bottle into hot sterilized bottle and seal.
