Ingredients

The ingredients are:
  • 2 cans (24 ounces) whole kernel corn (drained, 12 ounce each can)
  • 1/2 cup celery, thinly sliced
  • 1/4 cup green bell peppers, diced
  • 1/4 cup red bell peppers, diced
  • 1/4 cup yellow bell pepper, diced (optional - I add them )
  • 2 tablespoons green onions, chopped
  • 1 tablespoon fresh parsley, chopped
  • FOR MARINADE
  • 1/4 cup granulated sugar
  • 1/3 cup vinegar
  • 1/4 cup oil (vegetable oil)
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon tarragon
  • 1/4 teaspoon basil

How to Make

  • Step 1: In mixing bowl add drained kernel corn and the prepared vegetables

  • Step 2: In a small bowl combine the marinade ingredients - sugar, vinegar, vegetable oil, salt, pepper, tarragon and basil

  • Step 3: Pour over the salad ingredients, cover and allow to marinate at least 4 hours (overnight is best)

  • Step 4: Cover and store in fridge. You only add the salad to the serving bowl not the marinade.
