  • 2 large eggs
  • 2 teaspoons baking soda
  • 1 cup shredded coconut
  • 1 can (20 ounce) crushed pineapple (with juice, don't drain)
  • 1 teaspoon coconut extract
  • FOR THE ICING
  • 8 ounces cream cheese (softened)
  • 1 1/2 cup confectioners' sugar
  • 1/2 cup butter (soft)
  • 2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • Garnish
  • Flaked coconut (toasted)

How to Make

  • FOR THE CAKE

  • Step 1: Mix all ingredients and pour into greased 13 x 9” pan.

  • Step 3: Blend all ingredients very well. Frost cooled cake.

  • Step 4: Garnish with chopped nuts, coconut or chopped fruit, if desired.
