Ingredients

The ingredients are:
  • 2 tablespoons unsalted peanuts (roasted, finely chopped)
  • 1 cup diced tofu (extra firm tofu cut into 1/4" dice)
  • Pepper to taste
  • 1 cup chopped cucumber (finely chopped, unpeeled)
  • 5 ounces radish (5 radish, finely chopped)
  • 3/4 cup chopped tomato (seeded, finely chopped)
  • 1 tin (8 ounce) water chestnuts (finely chopped)
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon hot sauce (Franks hot sauce or your favorite hot sauce)
  • 1 teaspoon fresh lemon juice
  • 3/4 pound iceberg lettuce (24 leaves, washed, spin dried)

How to Make

  • Step 1: Spray a skillet lightly with oil and fry the diced tofu, medium heat, turning frequently until browned (apprx 6 minutes)

  • Step 2: Set the tofu aside to cool

  • Step 3: Combine the cuke, radish, tomato, water chestnuts, soy sauce, hot sauce & lemon juice

  • Step 4: Add tofu & peanuts just before serving

  • Step 5: Have the lettuce leaves arranged on a large platter with a bowl of the veggie mixture

  • Step 6: To serve have the guest spoon 2 tables spoons of the veggies on a lettuce leaf, roll the leaf like a burrito & enjoy
