Step 1: Batter ... Add all the dry ingredients into a bowl and mix to combine. Then, add all the wet ingredients to a measuring cup or small bowl; and, mix as well. Simply add the wet to the dry; and combine the two. Set to the side to let it rest. This can easily be made the night before; but, I do like to let it rest a good 15-30 minutes if possible. NOTE: Make sure your baking soda and powder are fresh ... NOT 3 yrs old. Really, it does make or break the recipe.
Step 2: Maple Syrup ... Add the syrup and bourbon to a small pot and simmer for 5 minutes.
Step 3: Sausage ... I use a good savory chicken sausage; but, use what is available or your favorite brand. Cut in 1/2" thick slices on angle. You can always grill them whole; then, cut into slices too. But, I just love the individual charred slices; just my preference. You can do either one.
Step 4: Sausage Note: Every brand of sausages are different. Aidell's are 3oz links; I often buy mine from a local butcher, and they are 4-4 1/2oz links. Usually I like a larger link per waffle; so, adjust accordingly. It really is up to you and your guests.
Step 5: Add the oil to a nonstick pan/grill pan, may need a bit more oil for a stainless pan; then, bring to medium high heat. Sear the sausage until golden brown on both sides. Should take about 2-4 minutes per side. If using a saute pan; you may need to saute them in 2 batches - you want them golden brown on both sides; so, do not over crowd the pan. Once they are done; transfer to a pie plate or bowl, cover with foil; and, transfer to a 200 degree oven to keep warm while you make the waffles.
Step 6: Waffles ... As the sausage cooks, start cooking the waffles. You should have enough batter to make 7-8 waffles; depending on your waffle iron. Cook the waffles like any other waffle. As you make them, serve immediately; or, put on a tray and place in the oven while you finish the rest. I like to set them on a sheet pan topped with a cooling wire rack; this way, they stay nice and crisp; but, it isn't that important if you don't have the wire rack.
Step 7: Note: Also, you can cut the recipe in half; or, make all the waffles and freeze the other half. They are easy to reheat too.
Step 8: Finish ... Add the sausage slices on top of the waffles; and serve with plenty of warm maple syrup.
Step 9: Serve and ENJOY! ... It is not traditional; and, it isn't chicken and waffles - but, a nice easy twist on the classic. My friend loves to finish it with a soft fried egg. And, I admit ... it is delicious! Makes an awesome brunch or dinner. My son loves it.
