Ingredients

The ingredients are:
  • 1 pound lean ground beef (85% lean)
  • 1/2 cup yellow onion, chopped
  • 1 teaspoon Italian seasoning (or dried oregano)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 can (10 3/4 ounce) condensed tomato soup (I use Campbell's Healthy Request)
  • 1/4 cup water
  • 1 cup whole kernel corn (frozen)
  • 5 1/2 ounces dry rotini pasta (cooked and drained, corkscrew pasta)
  • 1/4 cup grated Parmesan cheese, grated

How to Make

  • Step 1: Cook the rotini as directed on the package.

  • Step 2: While the pasta is cooking, cook the ground beef, onion, and seasonings in a 12-inch skillet over medium-high heat until the beef is browned. Stirring frequently to break up the meat. Drain off any fat and return to skillet.

  • Step 3: Add the soup, water, and corn to the meat mixture. Heat to a boil, then reduce heat to low. Cover and cook 5 minutes or until the corn is tender.

  • Step 4: Stir in the rotini and cook until hot and bubbly. Spoon into 6 bowls and sprinkle with Parmesan cheese.
