Ingredients

The ingredients are:
  • 2 cups all purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 cup milk (not low fat)
  • 1/3 cup yogurt (Greek, plain, NOT low-fat)
  • 1/3 cup oil (vegetable oil)
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup mini chocolate chips

How to Make

  • Step 1: Preheat oven to 350-F.

  • Step 2: Line a standard muffin tin with a dozen, 2-1/2 inch, cup-cake paper baking cups.

  • Step 3: In a mixing bowl, add the flour, cocoa powder, sugar, baking powder, salt and cinnamon (if using). Mix dry ingredients well with whisk.

  • Step 4: In another mixing bowl add the milk, yogurt, vegetable oil, eggs and vanilla extract. Mix well with whisk until blended.

  • Step 5: Add the liquid ingredients to the dry ingredients. Stir until dry ingredients are just moistened. Then carefully with a spoon mix in chocolate chips (careful not to over mix).

  • Step 6: Pour batter into 12 muffin cups. Fill each almost to the top.

  • Step 7: Bake at 350-F for 20 to 25-minutes or until a toothpick comes out

  • Step 8: Clean when inserted into center of muffin.
