Step 1: Preheat the oven to 180C
Step 2: Peel and cut the carrots in half lengthways.
Step 3: Heat oil on an oven safe skillet and add the carrot non cut side down and cook for 2 minutes before turning over and season with salt and pepper, caraway seeds and then add the stock and currants and bake in the oven for 30 minutes, adding the honey half way through.
