Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon all-purpose flour
  • 2 teaspoons paprika
  • 1/8 teaspoon cayenne pepper
  • 1/4 pound boneless skinless chicken breast (1 breast)
  • Salt & freshly ground black pepper
  • 1 tablespoon low-fat mayonnaise
  • 228 grams tortillas (2 low carb, 16 inch whole wheat tortillas)
  • 2 cups spinach
  • 1 to 2 tablespoon cilantro
  • 2 tablespoons chopped red onions
  • 1/4 teaspoon Cajun spice
  • Cayenne pepper (1 dash, maybe 2 dashes)
  • Paprika (1 dash)

How to Make

  • Step 1: Chop chicken breast into small 1/2" chunks.

  • Step 2: Combine 1 t. cajun seasoning,1 T. flour, paprika, cayenne, salt & pepper in small bowl.

  • Step 3: Add chicken to dry ingredients, tossing to combine.

  • Step 4: Add oil to small skillet, add chicken, cook 1-2 minute per side, set aside.

  • Step 5: In a very small bowl, mix mayonnaise, 1/4 teaspoons cajun spice, a dash or cayenne & paprika, spread equally on 6 1/2" fajita size whole wheat tortilla.

  • Step 6: Top with spinach, chicken,red onion & cilantro.

  • Step 7: Fold tortilla and seal with moisture from mayonnaise mixture.
