Step 1: Marinade ... Add everything to a bowl and mix; or, just add everything to a ziploc bag, close and shake. Add the chicken, close; and shake a few times, until all the chicken is coated. Refrigerate at least 2 hours, up to 4 hours; not too long - there is lemon juice in the marinade - and, it isn't good to marinate too long. The lemon juice can actually start to cook the meat, and change the texture, so 4 hours is plenty.
Step 2: Chicken ... Remove from the marinade, pat dry; and season with salt and pepper. Make sure, to let the chicken set on the counter to take the chill off. You don't want to cook with cold chicken.
Step 3: Grill ... Lightly oil the grill, and bring to medium high heat. Grill the chicken on the first side, until you get a nice char; then, flip. Obviously, depending on the cut and size of the chicken; your cooking times can vary. The temperature, if not sure, should be 165 degrees. As mentioned; I love the outdoor grill to get that smoky flavor; but, an inside grill works just as well. On an outdoor grill, I usually add hickory chips to my smoker box.
Step 4: Serve and ENJOY! ... This chicken recipe is great to serve with any of your favorite side dishes. Serve with a lemon wedge; and, squeeze it over the top of the chicken. Simple and delicious.
