The ingredients are:
  • 3 pounds beets (6 medium, scrubbed)
  • Olive oil
  • Salt
  • 3/4 cup balsamic vinegar
  • 4 teaspoons granulated sugar
  • Orange zest (from 1 small orange)
  • Freshly ground black pepper

How to Make

  • Step 1: Preheat oven to 375 degrees Fahrenheit.

  • Step 2: Drizzle olive oil over the beets and wrap them in aluminum foil.

  • Step 3: Roast beets for 1 hour or until tender. Remove from the oven, and cool about 10 minutes.

  • Step 4: Meanwhile, prepare balsamic glaze. In a sauté pan, mix balsamic vinegar and sugar. Heat over high heat until the vinegar has reduced to a syrup consistency. Add orange zest.

  • Step 5: Peel beets and cut in half or into quarters. Add beets to the balsamic syrup, season with salt and pepper, toss to coat and serve.
