  • 2 medium yellow onions (sliced)
  • 1 1/4 pounds potatoes (3 medium Yukon gold potatoes, unpeeled and cut into 1-inch cubes)
  • 1 can (14 1/2 ounce) low-sodium chicken broth (one-third-less reduced-sodium)
  • 1/2 teaspoon minced fresh thyme ( I use 1/8 tsp dried)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Melt margarine in a large skillet over medium heat; add onion, and cook 20 minutes or until golden, stirring often.

  • Step 2: Add potato and remaining ingredients; cover, reduce heat, and simmer 30 minutes.

  • Step 3: Uncover, increase heat to high, and simmer 3 to 5 additional minutes or until liquid is absorbed.
