Ingredients

The ingredients are:
  • 1 tablespoon butter (or 1 tablespoon margarine)
  • 2 small garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 1 2/3 cups fat-free milk
  • 2 tablespoons low-fat cream cheese
  • 1 1/4 cups shredded Parmesan cheese (finely shredded, fresh, divided)
  • 8 ounces fettuccine pasta (cooked without salt or fat)
  • 2 teaspoons chopped fresh flat-leaf parsley
  • Fresh ground pepper

How to Make

  • Step 1: Melt butter in a saucepan over medium heat. (this is where I would add the shrimp).

  • Step 2: Add garlic; saute' 1 minute.

  • Step 3: Stir in flour.

  • Step 4: Gradually add milk stirring with a whisk until blended. (I would add mushrooms here).

  • Step 5: Cook 8 minutes or until thick and bubbly, stirring constantly.

  • Step 6: Add cream cheese, cook 2 minutes, stirring constantly.

  • Step 7: Add 1 cup Parmesan cheese, stirring constantly until cheese melts.

  • Step 8: Pour over fettuccine; toss well to coat.

  • Step 9: Sprinkle with remaining 1/4 cup Parmesan cheese, parsley, and pepper.

  • Step 10: Serve immediately.
