Ingredients

The ingredients are:
  • 1 1/2 pound boneless pork loin
  • 12 ounces apples (2 Red Delicious, peeled, cored and chopped)
  • 1 cup cranberries (fresh, you can use frozen)
  • 1/4 cup barbecue sauce
  • 2 tablespoons light brown sugar (firmly packed)

How to Make

  • Step 1: Preheat the oven to 325°F.

  • Step 2: Place the pork on a rack in a shallow roasting pan.

  • Step 3: Roast until the pork is browned and the center reaches 165°F on a meat thermometer, about 1 hour and 20 minutes.

  • Step 4: Meanwhile, in a medium saucepan, combine the apples, cranberries, barbecue sauce, sugar and 1/4 cup water; bring to a boil.

  • Step 5: Reduce the heat and simmer, uncovered , stirring as needed, until the cranberries pop and the sauce is slightly thickened, about 15 minutes.

  • Step 6: Place the pork on a serving platter and slice.

  • Step 7: Spoon the sauce over the pork slices.
