Step 1: Cut the dragonfruit into quarters lengthways and remove the skin and cut the flesh into 2cm/1" thick slices.
Step 2: Cut the mango cheeks away from the stone and cut each cheek in half lengthways and cut the flesh from the skin and cut into 2cm/1" thick slices.
Step 3: Cut the skin from the pineapple and cut away the core and cut into 1cm/1/2" thick slices.
Step 4: Combine all the fruit in a shallow dish and sprinkle with the sugar and lime juice and toss gently with your hands.
Step 5: Put in the fridge for 30 minutes to chill and allow the flavours to develop.
