Step 1: Preheat oven to 350F.
Step 2: Spray an 8" x 8" baking pan with cooking spray and set aside.
Step 3: Combine both flours, chocolate chips, coconut, baking powder and baking soda in a large bowl.
Step 4: In a smaller bowl, whisk together pineapple, bananas, brown sugar, eggs, oil and vanilla.
Step 5: Add wet ingredients tyo dry ingredients and stir just until dry ingredients are moistened.
Step 6: Spread evenly in prepared pan.
Step 7: Bake for 40-45 minutes or until a wooden pick inserted in center of cake comes out clean.
Step 8: Cool cake in pan on a wire rack.
Step 9: Cut into 12 pieces and store in an airtight container or cover tightly with plastic wrap.
