Ingredients

The ingredients are:
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup chocolate chips, mini semi-sweet
  • 1/2 cup coconut, sweetened, shredded
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup pineapple, crushed, with juice
  • 2/3 cup bananas, ripe, mashed
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 tablespoons oil (high-quality vegetable oil)
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Spray an 8" x 8" baking pan with cooking spray and set aside.

  • Step 3: Combine both flours, chocolate chips, coconut, baking powder and baking soda in a large bowl.

  • Step 4: In a smaller bowl, whisk together pineapple, bananas, brown sugar, eggs, oil and vanilla.

  • Step 5: Add wet ingredients tyo dry ingredients and stir just until dry ingredients are moistened.

  • Step 6: Spread evenly in prepared pan.

  • Step 7: Bake for 40-45 minutes or until a wooden pick inserted in center of cake comes out clean.

  • Step 8: Cool cake in pan on a wire rack.

  • Step 9: Cut into 12 pieces and store in an airtight container or cover tightly with plastic wrap.
