Ingredients

The ingredients are:
  • 1 package (8 ounces) wild rice
  • 1 pound shrimp (medium-sized shrimp, peeled and deveined)
  • 2 tablespoons butter
  • 1/2 cup green bell pepper, seeded and chopped
  • 1/2 cup yellow onion, chopped
  • 1/2 cup mushrooms
  • 1 can (10 3/4 ounce) condensed cream of mushroom soup
  • 2 cup sharp cheddar cheese, grated
  • 1/2 teaspoon black pepper

How to Make

  • Step 1: Cook the rice according to package directions minus 1/4 cup water. Drain and cool.

  • Step 2: Heat the butter in saucepan and saute the pepper and onion and mushrooms until soft, about 5 minutes.

  • Step 3: Preheat oven to 350 degrees F.

  • Step 4: In a large bowl, combine the rice, soup, 1 1/2 cups of cheese, shrimp and vegetables.

  • Step 5: Add salt and pepper, to taste. Mix well.

  • Step 6: Spray a 9-inch square aluminum cake pan or an 11 by 7-inch glass casserole dish with vegetable spray.

  • Step 7: Place the mixture in the pan and top with remaining 1/2 cup cheese.

  • Step 8: Bake for 30 minutes, until bubbly.
