  • 3 large eggs
  • 1 1/2 cups milk
  • 1 1/2 cups all-purpose flour (all-purpose or white whole wheat)
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (melted)
  • 2/3 cup pitted cherries

How to Make

  • Step 1: Preheat oven to 450°F.

  • Step 2: Combine milk, flour, salt, and butter.

  • Step 3: Beat until just smooth.

  • Step 4: Beat in eggs one at a time.

  • Step 5: Stir in cherries.

  • Step 6: Let batter rest at room temperature for 15 minutes.

  • Step 7: Meanwhile, generously butter or grease 12 muffin cups.

  • Step 8: Place in oven to preheat.

  • Step 9: When batter has rested, carefully remove pans from oven.

  • Step 10: Fill each cup about 3/4 full.

  • Step 11: Bake for 20 minutes.

  • Step 12: Reduce heat to 350° and bake for 10-15 minutes longer, or until puffed and golden brown.

  • Step 13: Remove pans from oven.

  • Step 14: Carefully pierce a hole in the top of each popover to let steam escape.

  • Step 15: Cool 5 minutes before serving.
