Step 1: Preheat oven to 450°F.
Step 2: Combine milk, flour, salt, and butter.
Step 3: Beat until just smooth.
Step 4: Beat in eggs one at a time.
Step 5: Stir in cherries.
Step 6: Let batter rest at room temperature for 15 minutes.
Step 7: Meanwhile, generously butter or grease 12 muffin cups.
Step 8: Place in oven to preheat.
Step 9: When batter has rested, carefully remove pans from oven.
Step 10: Fill each cup about 3/4 full.
Step 11: Bake for 20 minutes.
Step 12: Reduce heat to 350° and bake for 10-15 minutes longer, or until puffed and golden brown.
Step 13: Remove pans from oven.
Step 14: Carefully pierce a hole in the top of each popover to let steam escape.
Step 15: Cool 5 minutes before serving.
