Step 1: Heat oil in large skillet with lid and cook onion until soft.
Step 2: Add mustard seeds, ginger, salt and turmeric; cook for about 3 minutes, while stirring.
Step 3: Add cauliflower pieces to spice mixture, making sure it is coated thoroughly.
Step 4: Stir tomatoes into mix with cumin and parsley. Add sugar to taste.
Step 5: Cover and cook over low heat for 10 to 15 minutes; stirring occaisonally.
