Step 1: Place all ingredients except rice and macaroni in a large soup kettle. Bring to a boil and reduce heat to a simmer. Cover pan and simmer for 2 hours, or until vegetables are cooked.
Step 2: Remove thyme stems and bay leaves and discard.
Step 3: Remove chicken thighs and chop into smaller pieces. Return to soup pot.
Step 4: Stir in cooked rice and uncooked macaroni and cover pan. Simmer another 25 minutes, or until pasta is done.
Step 5: Serve.
