Ingredients

The ingredients are:
  • 3/4 cup oil (vegetable oil)
  • 1/3 cup vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground mustard
  • 1 teaspoon dried basil (or more to taste)
  • 4 tablespoons minced fresh parsley
  • 2 teaspoons minced fresh basil ( or to taste - optional)
  • 1 sweet white onion (medium onion, made into rings)
  • 2 3/4 to 3 pounds tomatoes (thinly sliced, 6 large tomatoes)

How to Make

  • Step 1: In a small jar with a tight fitting lid add first ten ingredients, shake to mix.

  • Step 2: Layer onions in a shallow glass dish, a white or clear shallow dish makes for great presentation.

  • Step 3: Pour marinade over the tomatoes and onion slices and refrigerated for several hours.
