Ingredients

The ingredients are:
  • 1 1/2 cups bread flour (it calls for hard flour)
  • 1 cup flour (bran flour)
  • 1/2 pound granulated sugar (i think 1 1/8 cup)
  • 1 cup butter (1/2 pound butter (2 sticks)
  • 1/2 cup molasses
  • 2 teaspoons baking powder
  • 6 large eggs
  • 1/2 cups currants
  • Salt (pinch)

How to Make

  • Step 1: Cream butter and sugar add pinch salt, add eggs.

  • Step 2: Add molasses (spray cup with Pam to make molasses easier to measure) and currants; beat until fluffy. ( i used all bran and soaked them in this for 15 minutes )

  • Step 3: Sift hard flour and baking powder; add bran flour. Add to the creamed mixture and bring to the right consistency so batter will drop rather than flow from a tablespoon.

  • Step 4: Bake in a moderate oven 350 degrees until done, about 10 minutes for most muffins. make sure you spray pam in muffin tins.
