Step 1: Preheat oven to 400 degrees F.
Step 2: Prepare pastry and put bottom crust in 9 inch pie pan.
Step 3: In a skillet combine the sugars, cornstarch, ginger, cinnamon and vanilla and then fold in the peaches and simmer for 5 minutes or until filling thickens slightly. Remove from heat and add lemon juice.
Step 4: Spoon filling into prepared pie dish.
Step 5: Fit top crust over filling and crimp and seal the edges.
Step 6: Cut slits in dough on top of the pie.
Step 7: Place pie on baking sheet and cover loosely with foil.
Step 8: Bake for 15 minutes; remove foil and bake for 45 minutes or until crust is brown and filling is bubbling.
