Ingredients

The ingredients are:
  • 2 pie pastry (pastry for a double crust pie, your own or I use Pillsbury pie crusts)
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/4 cup cornstarch
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 1/4 teaspoons vanilla extract
  • 1 1/4 pounds peaches (5 peaches, peeled and sliced)
  • 2 tablespoons lemon juice

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: Prepare pastry and put bottom crust in 9 inch pie pan.

  • Step 3: In a skillet combine the sugars, cornstarch, ginger, cinnamon and vanilla and then fold in the peaches and simmer for 5 minutes or until filling thickens slightly. Remove from heat and add lemon juice.

  • Step 4: Spoon filling into prepared pie dish.

  • Step 5: Fit top crust over filling and crimp and seal the edges.

  • Step 6: Cut slits in dough on top of the pie.

  • Step 7: Place pie on baking sheet and cover loosely with foil.

  • Step 8: Bake for 15 minutes; remove foil and bake for 45 minutes or until crust is brown and filling is bubbling.
