Ingredients

The ingredients are:
  • 1 1/2 to 2 pounds skin-on boneless chicken breasts (4 large breasts, 6-8 ounces each)
  • Salt
  • Pepper
  • 1/4 cup olive oil
  • 6 ounces goat cheese
  • 1 tablespoon marjoram, minced
  • 1 garlic clove, roasted, peeled and mashed
  • 4 ounces prosciutto ham (4 slices, or Smithfield ham, or wild boar ham if you can get it)
  • 1 1/2 cups green chile sauce

How to Make

  • Step 1: Make a horizontal slit in each chicken breast and season with salt and pepper. Marinate in the olive oil for 30 minutes.

  • Step 2: While the chicken is marinating combine the cheese, marjoram and garlic to make a smooth mixture.

  • Step 3: Remove the breasts from the oil and stuff with 1 slice of ham and 1/4 of the cheese mixture.

  • Step 4: Grill over medium-low heat or until chicken skin is crispy and brown and chicken is cooked through (instead of grilling you can always saute the chicken until brown and bake at 450 for 10 minutes or so).

  • Step 5: Serve with green chile sauce if desired.
