Ingredients

The ingredients are:
  • 2 unbaked (458 grams) pie crusts (refrigerated)
  • 3 tablespoons olive oil
  • 1 1/2 pounds mushrooms, sliced (button)
  • 2 cups finely chopped yellow onion
  • 1/3 cup all purpose flour
  • 1/2 cup beer (stout beer, such as Guinness)
  • 2 large eggs (beaten)
  • 1 1/2 cups grated cheddar cheese (sharp)
  • 1 cup cottage cheese (small curd)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: Line a 9-inch deep dish pie pan with one crust.

  • Step 3: Heat oil in large frying pan and saute mushrooms until they start to soften. Add onions and cook over medium heat until onions are translucent.

  • Step 4: Remove from heat and add flour and beer, mixing well.

  • Step 5: Add remaining ingredients and season with salt and pepper.

  • Step 6: Pour in bottom crust and top with second crust. Crimp edges to seal and cut two slits in top to vent.

  • Step 7: Bake 40-45 minutes, or until crust is golden brown. Let cool a few minutes and slice.
